Recipe Tuesday- Chicken Focaccia Sandwiches


Chicken Focaccia Sandwiches
Ingredients
  • 2 (6-ounce) skinless, boneless chicken breast halves
  • Cooking spray
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt, divided
  • 1 tablespoon olive oil
  • 1/2 cup water
  • 1 1/2 cups (1/4-inch-thick) slices red onion
  • 2 1/2 cups red bell pepper strips (about 2 medium)
  • 1/3 cup chopped green onions
  • 10 ounce focaccia bread, cut in half horizontally
  • 1/2 cup (2 ounces) shredded sharp cheddar chees

Directions:
Cut each chicken breast half in half horizontally, and lightly coat chicken with cooking spray. Sprinkle Italian seasoning, garlic powder, black pepper, and 1/8 teaspoon salt over chicken. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 2 minutes on each side or until browned. Reduce heat to medium; add water. Cook 10 minutes or until chicken is done. Remove chicken from pan; keep warm.

Return pan to medium-high heat. Add red onion; sauté 2 minutes. Add bell pepper, green onions, and remaining 1/8 teaspoon salt; sauté 2 minutes or until tender.

Preheat broiler.

Place bottom half of focaccia on a baking sheet; top with chicken. Arrange onion mixture evenly over chicken; sprinkle with cheese. Broil 2 minutes or until cheese melts. Top with remaining bread; slice into 4 equal portions.

4 servings (serving size: 1 sandwich)

These delicious sandwiches make a great weeknight meal and take just minutes to prepare.

I am so happy Publix brought this deal back. All you have to do is buy the Brand Name product and the same Publix brand item will ring up FREE at the register. In the end, I usually can't even taste the difference..Can you?? Enjoy!

Recipe Tuesday- Thai Beef Salad


Happy Tuesday and I have a great dish for you today: Thai Beef Salad.

    • 1 cup loosely packed fresh cilantro leaves
    • 1/4 cup fresh lime juice (about 3 limes)
    • 2 tablespoons low-sodium soy sauce
    • 1 1/2 tablespoons Thai fish sauce
    • 1 tablespoon honey
    • 2 teaspoons grated orange rind
    • 2 garlic cloves, peeled
    • 4 (4-ounce) beef tenderloin steaks, trimmed
    • 1/2 small serrano chile
    • 2 teaspoons olive oil
    • 1/4 teaspoon black pepper
    • 1/8 teaspoon salt
    • 2 cups shredded Napa cabbage
    • 1 cup grated, seeded, peeled cucumber
    • 1/3 cup thinly sliced green onions
    • 3 tablespoons chopped fresh basil
    • 1 (12-ounce) package broccoli coleslaw
    • 1 (11-ounce) can mandarin oranges in light syrup, drained

Directions:
Combine first 8 ingredients in a food processor; process until smooth.

Heat oil in a large nonstick skillet over medium-high heat. Sprinkle steak evenly on both sides with pepper and salt. Add steak to pan; cook 4 minutes on each side or until desired degree of doneness. Remove steak from pan; let stand 5 minutes. Thinly slice steak.

Combine cabbage and the remaining ingredients in a large bowl. Drizzle slaw mixture with cilantro mixture; toss. Arrange 2 cups slaw mixture on each of 4 plates; top each serving with 3 ounces beef.

Yields 4 servings.

Almost Diamonds Review and Giveaway



Don't get me wrong I love my diamond engagement ring, but there are some times that I just don't feel like wearing it. Not like that- like on vacation or while at the beach or even during my morning jogs. I still want to wear a ring though. I found the perfect solution- a ring from Almost Diamonds. Wedding Thank You Notes


For every occasion it is appropriate to send a personal thank you note. Thanking someone in person is still great, but should be followed up with a thank you note as well. From engagement gifts to bridal shower presents and of course wedding gifts- a separate thank you note should be sent for each. Also remember to always send thank you notes to friends and relatives who arrange your parties.

Engagement and Bridal Shower Thank You's should be sent within 10 days of receiving a gift. If you receive a wedding gift in advance of the wedding, you should send the Thank You within a few days. Wedding Thank You's should be sent within two weeks after returning from your honeymoon.

Here are a couple of MUST when it comes to sending Thank You's!

-Make sure to address the gift sender: ex. Dear Mr. and Mrs. Smith. Do not just start writing Thank you for your gift.

-Never use Pre-Printed Thank You's. There is nothing better than a handwritten personalized note.

-Let your guest know how much you appreciated the gift and how it will be cherished for years to come.

-Remember to say: "We love the beautiful", not "I Love". You are a couple now and there will not be much use for I-exception would be for bridal shower gifts.

-Using a Dark Blue or Black pen is best and makes it easily readable.

You can make writing Thank You's fun by listening to wedding songs while you write. Hopefully you and your fiancee can each share in the fun. Enjoy!

Happy St. Patrick's Day

Recipe Tuesday-Apple Pie


Apple Pie- I am sure you are all ready for a dessert recipe!

This recipe serves 8
  • 6 cups thinly sliced apples
  • 3/4 cup white sugar
  • 1 tablespoon butter
  • 1 teaspoon ground cinnamon
  • 1 recipe pastry for a 9 inch single crust pie
  1. Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.
  2. Combine sugar and cinnamon. The amount of sugar used depends on how tart your apples are.
  3. Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and cinnamon. Dot top layer with small pieces of butter or margarine. Cover with top crust.
  4. Place on lowest rack in oven preheated to 450 degrees F. Bake for 10 minutes, then reduce oven temperature to 350 degrees F. Bake for 30 to 35 minutes longer. Serve warm or cold.

Tuxedo to Rent or Buy


Wedding season is here and I have been seeing more black tie wedding invitations. Now, for the man in your life- should he RENT or BUY a tuxedo?

Many men have probably rented a tuxedo at least once in their lives, which was most likely for their high school prom. Back in high school it was a better option to RENT a tuxedo because they were still growing. Your man was picking out a tuxedo for a party and possibly even to match his date, not for practical purposes.

Here is a what you should think about before you make your next decision:
Renting vs. Buying

First off, if you have the occasion to wear a tuxedo at least twice a year, then economically you would benefit from purchasing a classically styled, quality designer tuxedo. It is best to go with the classic style so you can use it for many years. If your guy prefers to wear the newest designs then naturally renting would be the best choose.

Now, I am sure you are wondering about the cost difference. In the past, renting a tuxedo would cost about $150-$180 depending on what style you choose. This cost would include everything you need- including the shoes. The cost to buy would be about 2-3 times the cost to rent. In 2 years the tuxedo would pay for itself.

Make sure you select a reputable formal wear specialist for your big day.

1. Don't select menu items with words such as: creamed, fried, super-sized or battered
DO Select menu items with words such as: Steamed, Grilled, Broiled or Roasted

2. Start your day with a healthy breakfast of oatmeal or a couple of slices of whole-wheat toast.



3. Buy fresh vegetables in season. They cost less and are likely to be at their peak of flavor.

4. Nuts are high in fat and calories. Eat them in smaller servings.

5. For dessert, have baked apples, pears or a fruit salad.

Recipe Tuesday- Hoisin Grilled Sirloin


In honor of National Nutrition Month, here is another great recipe. Check out last weeks Pasta Primavera.

Hoisin Grilled Sirloin
    • 2 tablespoons hoisin sauce
    • 1 tablespoon apricot preserves
    • 1 1/2 teaspoons fresh lime juice
    • 1/8 teaspoon crushed red pepper
    • 1/2 teaspoon salt
    • 1 pound top sirloin

Directions:
Heat a grill pan over medium-high heat.

Combine first 4 ingredients, stirring with a whisk. Sprinkle salt over beef. Add beef to pan; cook 3 minutes on each side or until desired degree of doneness. Let stand 5 minutes before slicing. Brush both sides of beef with hoisin mixture. Cut beef across the grain into thin slices.

Yields 4 servings (serving size: about 3 ounces).

Nutrition Tip:
Use a grill pan to make quick work of the steak, or take the opportunity to fire up the grill in nice weather. For colorful and healthy sides, serve stir-fried snow peas and brown rice.
