Recipe Tuesday- Chicken Rice Skillet

After I ordered my FREE sample of Betty Crocker Potatoes yesterday, I took a look at some of the great recipes that Betty Crocker had.

I am a basic cook, so I like easy recipes. Do you have ingredients in your fridge and you are just not sure what you can make with them? Betty Crocker has made it easy with the Easy Meal Finder-you can enter in up to 3 ingredients that you have handy and recipe ideas will pop up. I entered chicken and rice and I got the chicken rice skillet recipe.

1tablespoon vegetable oil
1 1/4pounds boneless skinless chicken breasts, cut into 1-inch pieces
2cups water
1tablespoon margarine or butter
1bag (1 pound) frozen broccoli, red peppers, onions and mushrooms, thawed
2cups uncooked instant rice
1teaspoon salt
1/4teaspoon pepper
1cup shredded Cheddar cheese (4 ounces)



In a 12-inch skillet, heat oil over medium-high heat. Cook chicken in oil 3 to 4 minutes, stirring occasionally, until no longer pink in center.


Add water and margarine; heat to boiling. Stir in vegetables, rice, salt and pepper. Sprinkle with cheese; remove from heat. Cover and let stand about 5 minutes or until water is absorbed.


Total cook time is 20 minutes..I can't wait to try it this week. I need to get some vegetables and shredded cheese at Publix today. I will most likely buy Fresh Vegetables since I will be shopping already. Enjoy!
